Ingredients:
2 potatoes, 300gr okra, 1 village sausage, 4 eggs, 2 tomatoes, salt, pepper, olive oil
Implementation:
Cut the potatoes and okra into sticks and the sausage into thin slices. Put a little olive oil in a pan and fry the potatoes, sausage and okra separately until they are golden brown but not fried normally. Remove from the pan. In the same pot and on medium heat, add the 2 ripe tomatoes that we have grated on the coarse side of the grater. Add salt and pepper and let the moisture evaporate to make a nice sauce. Beat the eggs on a plate and add salt and pepper. Then, pour the potatoes, okra and sausage into the sauce and mix gently. Add the eggs and mix a little until they are cooked. Remove from the pan and serve on a large plate with fresh olive oil.
